In space nobody can hear your engine idling.
Of course not, but you have to admit it’d be boring television if you looked at the Enterprise swooshing past the screen in silence.
It’s also funny to see plenty of spacecraft with wings that were built only to fly in space, being able to make sharp turns with only some sort of burners at the rear (the battlestar galactica viper is my favorite).
